Chicken Adobo Recipe

Ainesosat

  • 1 kg chicken thighs
  • 2 tsp salt
  • 2 tsp ground black pepper
  • 3 tbsp + ¼ cup soy sauce
  • 2 tbsp oyster sauce
  • 5-7 pcs bay leaves
  • 15 pcs whole black pepper
  • 3 tbsp cooking oil
  • 1 big onion or 2 small onions
  • 5-7 pcs garlic cloves
  • 3 tbsp vinegar
  • 1 tsp ground white pepper
  • 2 tsp sugar

    1. Clean the chicken. It’s important to remove the nasty stuff from the meat, check this video for some tips https://www.youtube.com/watch?v=U1Yp1P9O2w8
    2. In a large bowl marinate the chicken with salt, black pepper, soy sauce, oyster sauce, bay leaves and whole black pepper. Mix it well. Then cover it with plastic wrap and refrigerate it for more than 30 minutes. You can also marinate it a night before cooking for better results.
    3. Turn your stove in a medium high heat then put the oil. Sauté garlic and onions for a minute then add the marinate mixture. Cook for 10 minutes. After that give it a nice stir.
    4. Pour in the vinegar, cook for 5 minutes in medium high heat.
    5. Add the soy sauce and cover for 20 minutes in medium heat (check the adobo every now and then, stir when needed)
    6. After that add some white pepper (you can skip white pepper if you don’t want it spicy).
    7. If the adobo’s sauce turns oily, you can now put the sugar then cook for another 3 minutes and you’re done.
    8. Serve with rice or potatoes. Bon appétit!
